Roasted Peach Popsicles

At the end of August I made the trek back to my Indiana hometown to catch the last days of summer with my family. My older sister is a talented baker with seemingly limitless creativity and energy; her two girls are fruit fiends and popsicle addicts. Rather than have them eat processed grocery store popsicles all summer, she took a cue from a small batch popsicle shop in Brooklyn called People’s Pops. She decided to combine her daughters love of those things with a small summer business. Foxy Pops was born. Small batch popsicles made of local, seasonal fruit. One of the most popular popsicles has been the roasted peach. The ingredients are simple and pure and a great way to cool down and stay hydrated while soaking in the waning days of the season. This recipe makes 10 popsicles. 

Ingredients

1 Pound 5 Ounces Yellow Peaches -halved

Simple Syrup -to taste

2 Tablespoons Lemon Juice- freshly squeezed

Simple Syrup

⅔ Cup of Water

⅔ Cup of Sugar

Method

In a saucepan combine equal parts sugar and water, gently heat until the sugar is dissolved. Remove from heat and allow to cool before use. This recipe makes one cup. It can be stored in a sealed container and refrigerated.

Preheat your oven to 350˚F or 175˚C. After halving the peaches place them sliced side down on a cookie sheet, pits and all. Roast for about 20 minutes, until the flesh is soft. Allow to cool.

Once cool discard the pits and blitz the peaches skins and all in a blender or food processor. This amount of peaches will create about 2 Cups of puree.

Taste the peach blend. Depending on the season and ripeness the peaches can be more or less sweet. Add as much simple syrup as you deem necessary to get the desired sweetness. Add the lemon juice and mix well.

Pour the mixture into your ice pop molds. It may help to first transfer the blend into a measuring glass with a pouring spout. Don’t fill all the way to the top as the mixture will expand when it freezes.

Insert sticks and freeze about 4 to 5 hours until the popsicles are frozen. Remove from molds and transfer to plastic bags if you can resist not eating them immediately.
